Pumpkin Protein Pancakes on the HitchFire Grill

These protein-packed pumpkin pancakes are a breeze to whip up on your HitchFire grill and bring all the cozy, fall flavors you crave. With a base of Kodiak Cakes Pumpkin Pancake Mix, they’re rich in protein, hearty, and perfectly pumpkin-spiced. Top them off with whipped coconut topping, agave, blueberries, and toasted pumpkin seeds for a breakfast that’s as filling as it is delicious!

Ingredients

  • 1 cup Kodiak Cakes Pumpkin Flax Protein Pancake Mix
  • 3/4 cup water or milk of choice (for extra protein, use almond or oat milk with added protein)
  • 1/4 cup canned pumpkin puree (optional for more pumpkin flavor)
  • 1 scoop vanilla protein powder (optional for extra protein)
  • 1/2 tsp cinnamon (optional for extra spice)

Instructions

  1. Preheat your HitchFire grill: Set up the grill for medium heat, around 350°F, and place your cast iron flat top griddle on it to warm up.

  2. Mix the batter: In a mixing bowl, combine the Kodiak Cakes mix, water (or milk), canned pumpkin puree, and protein powder if using. Stir until the batter is smooth, but don’t over-mix.

  3. Test the griddle: Drop a bit of water on the griddle—if it sizzles and evaporates, it’s ready! Lightly oil the griddle to prevent sticking.

  4. Cook the pancakes: Pour about 1/4 cup of batter per pancake onto the griddle. Cook until you see bubbles on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2 minutes until golden.

  5. Plate and top: Stack the pancakes on a plate and add a dollop of whipped coconut topping, a drizzle of agave syrup, fresh blueberries, and a sprinkle of toasted pumpkin seeds.
